Fret not foodies, we’re still bringing you delicious meals which are easy to prepare at home. Chef Mandy has something for everyone. And in this heat, no one wants to slave over a steaming stove. So here is a wrap recipe, quick and easy and great as a picnic basket treat for those outings.
This is what you will need to prepare your wrap and enjoy it:
Infused onions: Cut 1 large onion into rings. In a saucepan add 1/2 cup of boiling water; 2 rooibos teabags;1 tsp of brown sugar. Allow the mixture to boil and reduce heat. Add 1 tbsp of oil and 1 tbsp orange flavoured jam and allow to simmer. Add a dash of lemon juice & balsamic vinegar and set aside to cool down.
Crispy strips: Season strips with chicken spice, white pepper,cayenne pepper, brown onion spice,1 tbsp of mushroom powder. Marinate chicken in spice rub for 30-1hour in refrigerator. In a bowl, add 1/2 cup of raw oats, 1/2 cup of cornflakes,1/2 cup of cake flour;,1 tsp of baking powder.Dip chicken strips in 2 eggs beaten with 1 tbsp of plain yoghurt, than coat chicken with oats/flour and shallow fry in hot oil.
Serving suggestion: Serve with homemade flat bread and apple & sweet melon coleslaw (for your coleslaw grate cabbage, carrot, thinly sliced apple matchsticks,grated sweet melon) (squeeze out the juice)
